I'm sure we all know this by now...but I'm going to restate it for those that might have never picked up on it through the grapevine...
Ways you are interupted when casting a spell.
#01 - Mob or PC executes a manuvuer designed to interupt. (Kick / Bash / Slam / Etc)
#02 - You lose more than 3% HP since you started casting (I *think* this is the number)
#03 - Your /LOC's [X], [Y] has changed more than 1pt since you started casting.

#03 is why i hate fighting in water since a little tap sends you flying back. But we've all become accustomed to standing still while your casting.

Here's the secret. YOU DO NOT HAVE TO. <smiles>
Oh, how? Fine, if I have to spell it out for you....consider the following scenario.
PvP versus, oh, Monk for example. He's beating the hell out of you and your running like a chicken and his MR is AWESOME so there is no way in hell a Root will stick...what do you do?
#01 - Know your locale. Find some kind of walls that are at 90d to each other.
#02 - Back yer a** up into that 90d corner and start casting.
#03 - Run like hell, dodging him and avoiding him.
#04 - Return to that little wedge just before you finish casting.
#05 - Laugh yer a** off as he gets furiously pissed that the spell landed after he KNOWS you've been running all around for the last five seconds and listen to him threaten to /PETITION you for hacking.

Simple truth, you wedged yourself up in that corner and locked your [X],[Y] when you started casting. Then before you finished you returned and your [X],[Y] where the same...so, the spell fires.

On, PvP servers i'm pretty sure this is old hate information, but I'm surprised how few people know this on PvP servers. Makes for very simple /DUELs Just Pop off your DoT's that way, hell even recast additional pets like that and you will insight and anger in your opponent like you've never seen.
